Knott’s Cowboy Caviar Sweet Potatoes

Ingredients
- 4 sweet potatoes
- Knott’s Cowboy Caviar
- Chorizo
- Olive oil
- 6 Tbsp sour cream
- 1 Lime + zest
- 1 Avocado
- Cilantro and green onions, if desired
Instructions
- Preheat the oven to 425 degrees. Line a baking sheet with parchment paper or foil.
- Clean the sweet potatoes. Poke with a fork multiple times.
- Rub with olive oil and place on a baking sheet. Sprinkle with salt.
- Bake for 55-60 minutes until done.
- Cook chorizo, using a spatula to break up chunks until cooked through.
- When sweet potatoes are cooked, split open and fluff interior of potato.
- Add chorizo and Knott’s Cowboy Caviar. (You can heat the cowboy caviar if desired.)
- Top with crema, avocado cilantro and green onions as desired.
