Jalapeño Twice Baked Potatoes

Spice up your next meal with a twice baked potato featuring Knott’s Jalapeno Pimiento Cheese.

  • 6 potatoes
  • olive oil
  • Kosher salt
  • Knott's Jalapeno Pimiento Cheese
  • 6-8 slices of bacon
  • jalapeño slices


  1. Heat oven to 400°F.
  2. Place potatoes on a cookie sheet.
  3. Drizzle olive oil and sprinkle salt on each potato.
  4. Bake for 1 hour.
  5. Pan fry the bacon until crispy, then chop bacon into small pieces.
  6. After potatoes cool, slice in half horizontally and place them on a baking sheet skin down.
  7. Spoon out the inside, placing it in a mixing bowl.
  8. Mix potatoes, Knott’s Jalapeno Pimiento Cheese and crumbled bacon.
  9. Fill each potato shell with mixture.
  10. Return to oven and bake 15 minutes.
