Autumn Chicken Pasta Salad
This deliciously flavorful chicken pasta salad is perfect for a side dish or a light meal on a cool autumn day.

Ingredients
- Knott’s Cranberry Pecan Chicken Salad
- 8 oz. Pasta, cooked
- 1 Green onion, thinly sliced
- 1 Cup Mandarin oranges, drained
- ¼ Cup mayonnaise
- 1 Tbsp honey
- 1 Tbsp dijon mustard
- 1 Tbsp poppyseeds
- ½ Tbsp Mandarin orange juice
- 1-2 Tbsp dried cranberries
- 1-2 Tbsp toasted, chopped pecans
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions. Drain and set aside.
- Drain Mandarin oranges, reserving the juice.
- In a separate bowl combine the mayonnaise, mustard, honey, poppyseeds and ½ tablespoon of the Mandarin orange juice.
- Mix together the chicken salad, pasta, dressing. Fold in the Mandarin oranges and green onions.
- Add pecans, cranberries, salt and pepper as desired.
- Serve at room temperature. Store in the refrigerator.
