Knott’s Cowboy Caviar Sweet Potatoes

Ingredients

  • 4 sweet potatoes
  • Knott’s Cowboy Caviar
  • Chorizo
  • Olive oil
  • 6 Tbsp sour cream
  • 1 Lime + zest
  • 1 Avocado
  • Cilantro and green onions, if desired

Instructions

  1. Preheat the oven to 425 degrees. Line a baking sheet with parchment paper or foil.
  2. Clean the sweet potatoes. Poke with a fork multiple times.
  3. Rub with olive oil and place on a baking sheet. Sprinkle with salt.
  4. Bake for 55-60 minutes until done.
  5. Cook chorizo, using a spatula to break up chunks until cooked through.
  6. When sweet potatoes are cooked, split open and fluff interior of potato.
  7. Add chorizo and Knott’s Cowboy Caviar. (You can heat the cowboy caviar if desired.)
  8. Top with crema, avocado cilantro and green onions as desired.
