Ingredients

  • Knott’s Cranberry Pecan Chicken Salad
  • 8 oz. Pasta, cooked
  • 1 Green onion, thinly sliced
  • 1 Cup Mandarin oranges, drained
  • ¼ Cup mayonnaise
  • 1 Tbsp honey
  • 1 Tbsp dijon mustard
  • 1 Tbsp poppyseeds
  • ½ Tbsp Mandarin orange juice
  • 1-2 Tbsp dried cranberries
  • 1-2 Tbsp toasted, chopped pecans
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. Drain Mandarin oranges, reserving the juice.
  3. In a separate bowl combine the mayonnaise, mustard, honey, poppyseeds and ½ tablespoon of the Mandarin orange juice.
  4. Mix together the chicken salad, pasta, dressing. Fold in the Mandarin oranges and green onions.
  5. Add pecans, cranberries, salt and pepper as desired.
  6. Serve at room temperature. Store in the refrigerator.
