Ingredients

  • 1 12 oz container of Knott’s Pimiento Cheese
  • 2 14-oz cans of Black Eyed Peas
  • 4 oz shredded cheddar cheese
  • 3 Tablespoon salsa
  • Hot sauce to taste
  • Salt and Pepper to taste

Instructions

  1. Preheat oven to 350 degrees.
  2. Drain black-eyed peas and partially mash. Leave some whole.
  3. Mix the black-eyed peas and remaining ingredients together in a bowl until well combined.
  4. Spread into a 1.5 quart baking dish and bake for 30 minutes until hot and bubbly.
  5. Serve with corn chips.
