Chicken Salad Stuffed Tomato

What you need:

  • A large, red tomato (preferably from your home garden)
  • Knott's Chicken Salad
  • Assortment of fresh fruits and/or vegetables
  • Lettuce and parsley (for garnish)

What you do:

  1. Make three slices halfway down the tomato (like spokes in wheel).
  2. Gently spread the slces apart to form an opening in the tomato. 
  3. Fill this opening with Knott's Chicken Salad.
  4. Place tomato on a lettuce leaf and garnish with parsley.
  5. Serve the stuffed tomato with the fresh fruits and/or vegetables.

Beefy Cheesy Pimiento Cheese Scoops

What you need:

  • 1 lbs. ground beef or chuck
  • 1-12 oz. container of Knott's Old Fashioned Pimiento Cheese Spread
  • 1-10 oz. container of Great Value Diced Tomatoes with Green Chilies (drained)
  • 2 teaspoons onion flakes
  • 1 large bag Great Value Scoops Tortilla Chips

What you do:

  1. In a large skillet, brown meat and drain.
  2. In a bowl, combine meat, pimiento cheese, diced tomatoes and chilies, and onion flakes.
  3. Place tortilla chips on a cookie sheet bowl sides up.
  4. Fill tortilla chips with meat filling.
  5. Bake at 400° for 8-10 minutes or untill golden brown and bubbly.
  6. Serve hot.

Fancy Potato Skins

What you need:

  • A few small potatoes
  • Knott's Old Fashioned Pimiento Cheese Spread
  • A few strips of bacon
  • Kosher salt and black pepper

What you do:

  1. Salt the potatoes and wrap each of them in aluminum foil.
  2. Bake potatoes at 350° until slightly soft.
  3. Pan fry the bacon until crispy.
  4. Chop bacon into small pieces.
  5. Slice the potatoes in half and place them on a baking sheet skin down.
  6. Scoop out enough potato to make a small indention.
  7. Fill indention with Knott's Old Fashioned Pimiento Cheese Spread and top with bacon.
  8. Place under broiler until cheese starts to melt and potatoes are tender.
  9. Salt and pepper to taste and serve.
